It’s so hard to believe that Valentine’s is gone and Easter is on it’s way!  For the past couple of days I’ve had Easter cupcakes on my mind, so I thought I’d update the pics and repost one of my Easter posts from last year!

This was originally posted on April 23, 2011 on my old blog AdventuresinSavings.com.

I won’t be posting much today and tomorrow, but I thought I’d quickly share what I’ve been up to in the kitchen last night and this morning!

I know I’ve already made some Easter cupcakes and Easter cookies, but I wanted to make some fun treats for our church Kids Easter Party today…. and so I made some more!  But first, I baked up this cute little bunny cake.

I don’t usually use pre-shaped pans, but a sweet, sweet lady at our church gave me this tiny bunny head and it was just irresistible.  I’m not sure how to describe the size to you, but it only holds about half of a regular cake mix.

Since that wasn’t quite enough cake for a bunch of kids at the church, I also did cupcakes.

Lots and lots of little bunny ears cupcakes.  In fact, yesterday I cut out 50 little white ears (from marshmallow fondant) and 50 little pink ear “middles”… and put them all together to dry.  I thought it would be fun, but after about the 10th one, I was so over it.   I used leaf cutters from this Wilton Gum paste set for both of those cuts and I used my Wilton 1M tip for the frosting!

But I pushed on and finished the task.

Then… my kids asked if they could make cookies to take to church.  Of course, I didn’t want to miss a chance to bake sugar cookies, plus I had extra buttercream left over from the cupcakes, so we made sugar cookies and frosted them!

Sarah helped alot… she’s my 3rd hand in the kitchen some days!

If you like soft and chewy… not too sweet sugar cookies, you must try this Sugar Cookie recipe.  They are just so wonderful!!
And now I’m off to the Easter party… Happy Easter!!

Did I miss anything?   Any questions about the cupcakes or cookies?   Please leave them in the comments and I’m happy to answer & help!

  1. Hello, I discovered your website last week and did your sugar cookies for my daughter’s daycare Valentine Day! They were a hit! I cannot wait to bake them again for Easter! I was wondering which tip you used for spreading the frost (on the easter cookies). It looks wonderful yet simple to do.

  2. Ok thanks I have a Wilton set and look what I have. I just started to bake and really getting into it. I think I’ll try also your cake “eggs in the grass” :)

  3. Hi! I wanted to do something similar with the bunny ears on the cupcake. I was just wondering, do the ears stay in the frosting or did you insert the fondant into the cupcake?
