Happy Saturday!! I’m having a pretty relaxing day here in southern Mississippi. It’s a glorious day outside – perfect blue skies and temps in the 70’s. And… I have no cakes I have to work on!

I’ve done a little cleaning, played in the dirt with my baby boy for a little while, snapped a few pictures and watched a little TV. It’s been nice. Very, very nice!
I’ve been seeing Cindo de Mayo posts popping up all over the internet and I don’t actually have an official “Cinco de Mayo” post for you. But I do have a 21st Birthday Margarita Cake. And it seemed like maybe it could sort of be Cinco-de-Mayo-ish.
That’s totally a thing, by the way. Cinco-de-Mayo-ish. Dontcha think? 😉
This was an 8″ square cake and it was a simple white cake with vanilla buttercream. The cake was covered and decorated with homemade marshmallow fondant. The margarita glass was actually plastic and I found it on clearance at Walmart for $.50. Let me tell you a little story about that. I waited until the last minute to go buy the thing and I nearly panicked when it turns out that cheap plastic margarita glasses aren’t readily available all the time anywhere around where I live.
You see – I like margaritas okay, I guess. I’ve only had a handful of them in my life. I’m not really a big fan of alcoholic beverages. I like a few “girly” drinks, like a strawberry daiquiri or a Bahama Mama or a wine cooler here and there – but even those are few and far between. It’s just not ‘my thing’ and I’m pretty ignorant about shopping for anything alcohol-related.
So I had assumed I could easily run to the Walmart or the Dollar Tree and grab a plastic margarita glass. I was quickly starting to freak out when that wasn’t the case. I didn’t have time to order anything online and get it here and making a glass was totally out of the question. So I kept scrambling – store to store – looking!
And then finally, at the second Walmart I went to, there in the front was a clearance bin of cheap summer dishes and I nearly cried when I saw two of those margarita glasses in the mix. And they were marked down to only 50 cents. I bought both! 🙂
I made lime Jello and then before it was completely set, I used an immersion blender to mix it up with some white food coloring. I poured it into the glass, put it back in the frig and let it set. It didn’t exactly look like a margarita, but I was happy with it. I used real salt on the rim and I made the lime out of fondant.
