Ingredients

  • 1 tbsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1/2 cup milk
  • 2-3 granny smith apples (or other apples)

For the Crumb Topping

  • 3/4 cup all purpose flour
  • 1/4 cup brown sugar
  • 2 tbsp. granulated sugar
  • 1 tsp. cinnamon
  • 4 tbsp. unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F. Line a muffin tin with cupcake liners.
  2. Peel and chop the apples into small pieces. (Optional: drizzle with lemon or lime juice to prevent browning.)
  3. In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt.
  4. In a large bowl, beat the butter and sugars until creamy.
  5. Mix in the sour cream, eggs, and vanilla extract until just combined.
  6. Gently fold the dry ingredients into the wet mixture.
  7. Add the milk and continue folding until the batter comes together.
  8. Fold in the chopped apples.
  9. In a small bowl, use a fork to combine the flour, sugars, cinnamon, and melted butter for the topping.
  10. Fill each muffin cup about two-thirds full with batter.
  11. Sprinkle generously with crumb topping.
  12. Bake for 20 minutes, or until golden and a toothpick inserted in the center comes out clean.
