Last week was insanely busy for me. I was sick. My baby Asher was sick. We had a 4-H meeting. A Kid’s Fishing Day at the lake. A death in our church family. A Ladies Conference at church. And I had 6 cakes to bake & decorate. Plus a smash cake. Plus cookies.
So if my posting seemed “off” or lacking… let me assure you, it was. I was sleep deprived and exhausted pretty much the entire week. Then yesterday I had computer issues. But it’s a new day…. and I hope a better one!
To start the week off on a happy note, I thought I’d share probably my brightest cake from last week. Granted, I loved all cakes from the last couple of weeks… there was a Minne Mouse one, an Ocean themed one, a Bright 1st Birthday Cake with Stripes & Dots, a Nurse Cake, another Zebra cake, and a super fun Baby Gender Reveal cake…. but looking at all of them – this one screams bright and happy and fun!

This cake’s inspiration came from two places. Mostly, it was inspired by this Come Fly With Me Balloon Cake picture that the customer sent me.
But since the party was Circus themed, she also wanted to incorporate the elephant from his invitation found on Etsy.
The balloons and elephant were cut out using cookie cutters (these and these) and I hand cut the other details. I used an edible marker to draw on the balloon strings and I piped the clouds with a large round Ateco tip.
Then I added a fondant “1” on top with a balloon on a wire!
The three tiers of this cake were (top to bottom) Butter Cake, White Almond Sour Cream Cake, and Vanilla Cake. It was filled and frosted with vanilla buttercream, then decorated with marshmallow fondant.
Then we did matching Circus Animal Cookies. These were sugar cookies with buttercream frosting and fondant cut-out decorations. I used the Wilton Animal Cutters for these… I had to add the ball on the seal by hand and it kept breaking off of the cookies, so not many of those made it into the box 🙁
And that’s that! I ended my rough week by hanging out in the yard with my kiddos.. watching them play ball with their Daddy, jump on the trampoline, and get creative with ways to entertain Asher…
