Ingredients

  • 2 tablespoons butter
  • 2 12-ounce packages frozen corn
  • 1 package ranch seasoning mix
  • 1 8-ounce package cream cheese, cubed
  • 1 cup bacon bits or 4 strips bacon, cooked and chopped
  • 2 cups shredded cheddar Jack cheese, divided

Instructions

  1. Preheat the oven to 350 degrees.
  2. Heat a large skillet over medium heat, then add the butter to the pan.
  3. When the butter is melted, add the corn and saute until the kernels are softened.
  4. Add the cream cheese and stir until melted and smooth.
  5. Add the bacon, ranch seasoning and one cup of shredded cheese.
  6. Continue stirring until the cheese is melted.
  7. Remove the pan from heat and stir in one cup of shredded cheese.
  8. Transfer the mixture to a 9×13 baking dish and top with remaining cheese.
  9. Bake in the preheated oven for 20 to 30 minutes, until the sauce is bubbly and the cheese on top is melted.
