Creamy & Spicy Corn Dip

This Crack Corn Dip is a must-have recipe at every family gathering! It’s a creamy, spicy, cheesy dip that is the perfect blend of sweet corn, cheeses, creamy mayo and sour crem plus pickled jalapenos. Serve this Corn Dip with Fritos and you have the perfect appetizer or snack!

Ingredients

Units Scale
  • 4 cups cooked whole kernal corn, cooked & drained*
  • 1 cup mayo
  • 1 cup sour cream
  • 2 cups shredded cheddar or Fiesta Blend cheese
  • 1 (10 oz) can mild diced tomatoes with green chilies, drained
  • 1 (4 oz.) can chopped green chilies, drained
  • 1/4 cup pickled jalapeños, finely chopped
  • 1 tsp cumin
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Creole or Cajun seasoning
 

Instructions

  1. In a medium to large mixing bowl, stir together all ingredients.
  2. Cover and chill overnight.
  3. Serve this corn dip recipe with Fritos, tortilla chips, and/or crackers. I’ve also recently discovered that I love eating corn dip with pretzel bites.

Notes

  • Drain your ingredients! If use canned corn, be sure to drain it well, along with the Rotel tomatoes, green chiles and jalapenos! Extra juice will make this corn and cheese dip soupy and nobody wants soupy Corn Rotel Dip.
  • Don’t skip the chilling! Crack Corn Dip with Rotel is bet cold! Again, you will end up with a really thick and creamy corn dip if you chill it for a few hours or overnight.
