Description

This Crockpot Sweet Potato Casserole takes all the flavor of the classic holiday side and lets your slow cooker do the work instead of your oven. It’s a simple slow cooker sweet potato casserole that’s perfect for Thanksgiving dinner, Christmas, or any holiday table where oven space is already spoken for. Creamy, sweet, and topped with melted marshmallows and a crunchy pecan topping, it might just become your new favorite Thanksgiving side dish.

Instructions

  1. Add the sweet potatoes to the bottom of a large, greased crockpot.
  2. Add the melted butter, brown sugar, heavy cream, maple syrup, salt, and pumpkin pie spice to a mixing bowl and mix until fully combined.
  3. Pour the mixture over the sweet potatoes and place the lid on the crockpot.
  4. Set the heat to HIGH for three hours.
  5. After three hours, check that the sweet potatoes are fork-tender, then mash them with a potato masher until smooth.
  6. Sprinkle the mini marshmallows and pecans evenly over the top of the sweet potatoes. Place the lid back on the crockpot and cook for an additional 20 minutes or until the marshmallows are melted.
  7. Serve warm.

Notes

  • Unlike the oven-baked style, this is not a “thick” sweet potato casserole. It has a thinner consistency by nature. I have found that if you allow the casserole to rest in the crockpot on the “warm” setting with the lid off for about 30 minutes, it will thicken slightly.
  • You can achieve the “roasted” marshmallow look by serving some of the casserole in an oven-safe ramekin, topping it with extra mini marshmallows, and placing it under the broiler until the marshmallows are golden-brown.
