Description

A flaky crescent roll crust topped with soft scrambled eggs, sausage and peppers, and melty cheese. This easy breakfast pizza feeds a crowd, comes together in about 34 minutes, and can even be made the night before.

Ingredients

Units Scale
  • 2 (8-ounce) packages crescent roll dough
  • 3 tablespoons salted butter, divided
  • 1 pound mild ground sausage
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red or orange bell pepper
  • 8 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 2 1/2 cups shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Unroll both tubes of crescent roll dough and lay them on a greased baking sheet. Use your fingers to seal the seams and any holes in the dough.
  3. Poke holes all over the dough with a fork. Bake for 8 minutes, or until barely golden brown. Remove from the oven and set aside.
  4. Melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the peppers and sausage and cook until the peppers are soft and the sausage is no longer pink. Remove from the heat and set aside.
  5. Crack the eggs into a mixing bowl and add the salt, pepper, and onion powder. Whisk until smooth.
  6. Melt the remaining 2 tablespoons of butter in a large skillet over medium heat. Add the eggs and move them around with a spatula until barely cooked through. There should be no liquid left in the skillet, but the eggs should still be soft and moist.
  7. Sprinkle the scrambled eggs evenly over the pre-baked crust, followed by the sausage and pepper mixture and the shredded cheese.
  8. Bake for about 6 minutes, or until the cheese is fully melted.
  9. Serve warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • This can be made the night before and reheated the next morning.
