Description

This creamy one-pot cheeseburger soup has tender potatoes, seasoned ground beef, and a smooth, cheesy broth topped with crispy fried onions. It’s a cozy comfort food dinner the whole family will love.

Ingredients

Units Scale
  • 1 pound ground beef, thawed
  • 2 tablespoons salted butter
  • 1/2 cup white onion, diced
  • 1/2 cup celery, finely diced
  • 1/2 cup carrots, finely diced
  • 2 teaspoons garlic, diced or minced
  • 4 cups chicken broth
  • 3 cups Yukon gold potatoes, peeled and diced
  • 2 cups whole milk
  • 16-ounce package Velveeta cheese, cubed
  • 1/2 cup sour cream
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup crispy fried onions for topping
  • Optional toppings: fresh chopped parsley, bacon bits, diced pickles, shredded cheddar cheese

Instructions

  1. Heat a stock or soup pot over medium heat and brown the ground beef, about 6 minutes. Drain grease if needed.
  2. Add butter, onion, celery, and carrots and cook until softened, about 4 minutes. Add garlic and cook for 1 additional minute.
  3. Add the chicken broth and diced potatoes, then increase heat and boil 14-15 minutes, or until potatoes are tender.
  4. Reduce heat to low, then mix in the milk, Worcestershire, salt, and pepper.
  5. Mix in the cubed Velveeta until melted and smooth, about 2 minutes.
  6. Remove from heat, then whisk in the sour cream.
  7. Serve and top with crispy fried onions.

Notes

  • You can substitute the Velveeta with shredded cheddar cheese.
  • You can substitute the ground beef with another ground meat like chicken or turkey.
  • Store leftovers in the fridge for up to 4 days.
  • Serve with hard rolls, onion rings, or even fries.
  • You can put the onion, celery, and carrots through a food processor to make them extra fine.
