- 8 ounces Lo Mein noodles
- 1 pound boneless, skinless chicken breasts, cut into bite sized pieces
- 2 tablespoons vegetable oil, divided

- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1/4 cup chicken broth

- Cook noodles according to package directions until al dente. Drain, rinse with cold water, and toss with 1 teaspoon vegetable oil to prevent sticking. Set aside.
- In a bowl, whisk together all sauce ingredients and set aside.
- Heat 1 tablespoon oil in a large skillet or wok over high heat. Add chicken and stir-fry for 4–5 minutes until cooked through (internal temperature of 165°F). Remove to a plate.
- Add remaining tablespoon of oil to the pan. Add bell pepper, carrots, and onion. Stir-fry for 2 minutes.
- Add snow peas. Stir-fry for 2 minutes until vegetables are crisp-tender.
- Add garlic and ginger. Stir-fry for 30 seconds until fragrant.
- Return chicken to the pan. Add cooked noodles and sauce.
- Toss everything together using tongs, cooking for 2–3 minutes until noodles absorb some of the sauce and everything is well combined and heated through.
- Garnish with green onions if desired, and serve immediately.

- How to store: Chicken Lo Mein should be stored in an airtight container in the refrigerator for up to 3 days.
