- 8 fresh peaches (about 5 cups)
- 1/4 cup brown sugar
- 2 teaspoons vanilla extract
- Non-stick cooking spray
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter
Instructions
- Use a paring knife to peel and slice the peaches, then place them in a large mixing bowl.
- Add the brown sugar and vanilla. Stir to coat the peaches. Set aside.
- In a separate bowl, mix together the remaining dry ingredients (flour, granulated sugar, baking powder, cinnamon, baking soda, and salt).
- Lightly spray the bottom of the crock pot with non-stick cooking spray.
- Use a slotted spoon to spread the sugared peaches evenly across the bottom of the crockpot.
- Sprinkle the dry mixture evenly over the top of the peaches.
- Scatter cubes of cold butter over the top.
- Place a paper towel over the top of the crockpot dish. (see why here)
- Cover and let the cobbler cook on high for 2-3 hours.
- Switch to low and cook for another 30 minutes, or until the top is golden brown and bubbly. If you’re not going to eat immediately, you can set your slow cooker to the warm setting until it’s time to eat!
- Serve warm peach cobbler or at room temperature—ice cream on top is always a good idea!
- Store any leftover fresh peach cobbler in an airtight container in the refrigerator.
