Description
These adorable Grinch Cookies look and taste like soft green crinkle cookies. They are perfect for the holiday season. You can serve them at Christmas parties, a Grinch movie night, or cookie exchanges.

- 1/2 cup Butter, softened
- 2 1/2 cups Powdered Sugar, divided (2 cups in cookies, 1/2 to roll in)
- 2 Large Eggs
- 2 teaspoons Vanilla Extract
- 1 teaspoon Peppermint Extract
- 1 teaspoon Green Food Coloring
- 2 1/2 cups All Purpose Flour
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Cornstarch
- 21 Small Red Heart Sprinkles

- 2 tablespoon Cookie Scoop, quick release
- Small bowl & spoon

Instructions
- Cream together the butter and 2 cups powdered sugar.
- Then mix in the eggs, vanilla, peppermint, and food dye.
- Once well combined, mix in the flour and baking powder to form a dough.
- Chill the dough in the fridge for at least one hour, it will still be just the slightest bit sticky after chilling.
- Preheat your oven 350℉ and line your baking sheets with parchment paper.
- Make the sugar topping by mixing the cornstarch and the rest of the powdered sugar (1/2 cup) .
- Use your cookie scoop to scoop a ball of cookie dough out of the large bowl and place it in the bowl with the powdered sugar. Roll the ball in the sugar and cornstarch mixture until completely covered, then place on your baking sheet.
- Repeat step 7 until you run out of dough.
- Bake for 10-12 minutes, or until slightly firm.
- Place a heart sprinkle in the center as soon as they come out of the oven.
- Allow them to cool for a few minutes on a cooling rack and enjoy!
Notes
Store at room temperature for 3-4 days in an airtight container.
