Description

Creamy no bake pumpkin cheesecake cups with a cinnamon graham cracker crust, layered in mini mason jars. Ready in 20 minutes with no oven required.

Pumpkin Cheesecake Filling

Instructions

    1. Toss the graham crackers into a blender or food processor and pulse them until you have fine crumbs. Add the melted butter, both sugars, and the cinnamon, then pulse again until it all comes together and looks like wet sand.
    2. Spoon about 3 Tbsp of crumbs into each serving cup and set them aside. Hang onto a little of that crumb mixture for sprinkling on top later.
    3. Add the cream cheese to your stand mixer with the paddle attachment and beat it on medium speed for 2 minutes. Scrape the bowl, then add the pumpkin, pumpkin pie spice, instant pudding packet, and sweetened condensed milk. Mix until it’s smooth. Scrape the bowl one more time so you don’t leave a streak of cream cheese hiding down at the bottom.
    4. Swap over to a spatula and gently fold in the whipped topping. Go easy here… folding keeps the filling light and fluffy.
    5. Spoon the filling into your prepared cups.
    6. Serving them right away? Top with canned whipped cream, sprinkle on those leftover graham cracker crumbs, and dig in!

Notes

  • Serving these the next day? Assemble the cups and place them in the refrigerator. Top with whipped cream and graham cracker crumbs right before serving.
