Description

Easy Walking Tacos are a fun way to turn taco night into a fun meal with super easy cleanup! This easy recipe starts with seasoned taco meat and a bag of chips, then piles on all your favorite taco toppings like cheddar cheese, sour cream, and lettuce + tomatoes. It’s a quick meal that’s perfect for busy nights, game day, birthday parties, or feeding a large crowd, with almost no cleanup.

For the Taco Seasoning:

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp coriander (optional)
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 tsp cornstarch (for thickening, optional)
  • OR 1 packet of Taco Seasoning

For the Taco Meat:

  • 1 lb ground beef
  • 2/3 cup water
  • Taco seasoning

For the Bags:

  • 6 individual bags of Doritos and/Fritos (2.75 oz each)
  • 2 cups cheddar cheese, finely shredded
  • 1 cup iceberg or romaine lettuce, shredded
  • 1 cup tomatoes, diced
  • 1/2 cup red onion, diced
  • Sliced jalapeños (fresh or pickled)
  • Chopped fresh cilantro
  • 3-4 green onions, sliced thin
  • Sour cream or Mexican crema
  • Taco sauce (mild, medium, or hot)
  • Guacamole
  • 1 can (15 oz) black beans, rinsed and drained

Instructions

  1. In a small bowl, whisk together the chili powder, cumin, garlic powder, onion powder, paprika, oregano, coriander, kosher salt, black pepper, and cornstarch (if using) until well combined. Set aside.
  2. Place a large skillet or pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it’s fully browned (about 5-7 minutes). Drain the excess grease from the skillet.
  3. Sprinkle the taco seasoning over the meat, then stir to coat.
  4. Pour in the water and stir everything together until well combined. Bring the mixture to a simmer, reduce heat to medium low and let it cook for another 5-7 minutes, or until the sauce has thickened slightly.
  5. Place all your toppings into separate bowls so everyone can easily build their own bag.
  6. Take a bag of chips. Gently crush the chips inside the bag with your hands to break them into smaller, bite-sized pieces.
  7. Using scissors, cut the bag open lengthwise down the side. This creates a “bowl” that’s easy to eat from. Fold over the edges to create some stability.
  8. Spoon a generous amount of the taco meat into the chip bag.
  9. Let everyone move down the topping bar and add their desired toppings directly into the bag. Stick a fork in the bag, give it a little stir to mix everything, and enjoy!

Notes

  • The cornstarch is optional but helps create a thicker, more coating-like sauce that clings better to the meat. If you prefer a thinner consistency or don’t have cornstarch on hand, simply omit it and the seasoning will still taste delicious.
  • This recipe makes enough seasoning for 1 lb of meat. You can easily double or triple the seasoning recipe and store the extra in an airtight container for up to 1 year.
  • Don’t like ground beef? This works great with ground turkey, ground chicken, or chorizo.
  • For a vegetarian version, sauté crumbled tofu, lentils, or a mix of black beans with the taco seasoning.
  • Add a pinch of cayenne pepper to the seasoning mix, use a hot taco sauce, or add extra jalapeños to your bag from a kick.
