Grilled Chicken Thighs with Easy Marinade Recipe

Description

Summertime and grilling are a given at our house and you're going to love this super easy (and delicious) recipe for Grilled Chicken Thighs. Lightly charred outside and packed with flavor from the simple, flavor-packed fast marinade. The marinade is made with simple ingredients and you probably already have everything you need on hand!


Ingredients

  • 1/3 cup oil
  • 1/4 cup soy sauce
  • 2 Tablespoons honey
  • 2 Tablespoons lemon juice
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 Tablespoon parsley
  • 3 lbs of bone-in skin-on chicken thighs (about 8 thighs)

Instructions

  1. Combine oil, soy sauce, honey, lemon juice, black pepper, Italian seasoning, garlic, and parsley
  2. Mix well and set aside.
  3. Place the chicken in a single layer in a shallow baking dish.
  4. Pour the marinade over the chicken, cover, and place chicken in refrigerator for at least 30 minutes (can marinate overnight) or up to 8 hours.
  5. Preheat grill to medium-high heat - about 400ºF, make sure the grates are cleaned and oiled.
  6. Place chicken on grill skin-side down, close, and cook for 6-8 minutes until the chicken easily comes off the grill when you pick it up with tongs.
  7. Flip chicken, and cook another 6-8 minutes until chicken is cooked through (reaches 165ºF internally)
  8. Remove from grill, and let rest for 5 minutes before serving.
  9. Sprinkle with additional parsley and lemon juice if desired.

Notes

  • Use a paper towel to rub some oil on the grill grates to help prevent the chicken from sticking.
  • If the chicken is sticking when you get ready to flip it, allow it to cook for another minute or two.
  • Chicken cooks best over direct heat so make sure you have it on a hot spot on your grill.
