Description
Summertime and grilling are a given at our house and you're going to love this super easy (and delicious) recipe for Grilled Chicken Thighs. Lightly charred outside and packed with flavor from the simple, flavor-packed fast marinade. The marinade is made with simple ingredients and you probably already have everything you need on hand!

- 1/3 cup oil
- 1/4 cup soy sauce
- 2 Tablespoons honey
- 2 Tablespoons lemon juice
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 Tablespoon parsley
- 3 lbs of bone-in skin-on chicken thighs (about 8 thighs)
Instructions
- Combine oil, soy sauce, honey, lemon juice, black pepper, Italian seasoning, garlic, and parsley
- Mix well and set aside.
- Place the chicken in a single layer in a shallow baking dish.
- Pour the marinade over the chicken, cover, and place chicken in refrigerator for at least 30 minutes (can marinate overnight) or up to 8 hours.
- Preheat grill to medium-high heat - about 400ºF, make sure the grates are cleaned and oiled.
- Place chicken on grill skin-side down, close, and cook for 6-8 minutes until the chicken easily comes off the grill when you pick it up with tongs.
- Flip chicken, and cook another 6-8 minutes until chicken is cooked through (reaches 165ºF internally)
- Remove from grill, and let rest for 5 minutes before serving.
- Sprinkle with additional parsley and lemon juice if desired.
Notes
- Use a paper towel to rub some oil on the grill grates to help prevent the chicken from sticking.
- If the chicken is sticking when you get ready to flip it, allow it to cook for another minute or two.
- Chicken cooks best over direct heat so make sure you have it on a hot spot on your grill.
