Easy Funnel Cake Recipe with Pancake Mix

- 2 cups Pancake Mix
- 1 Egg
- 1 cup Milk
- 1/4 teaspoon vanilla extract
- 2 teaspoons Vegetable Oil
- 1/2 cup Powdered Sugar
- Oil (for frying)
- Topping(s) of Your Choice
Instructions
- Start by adding your pancake mix, egg, milk, vanilla, and two teaspoons of vegetable oil to a bowl.
- Mix on high until well combined. It needs to be rather thick. Not super runny.
- Add oil for frying to a deep skillet or heavy pot (like a Dutch oven), around 3 inches deep. Place your batter in a piping bag.
- Once your oil has heated up, cut a small tip off your piping bag. Drizzle your batter into the oil in a circular motion. It doesn’t have to be perfect. I used a little over half a piping bag, per cake.
- Let it fry for about two minutes, then gently press it down into the oil with your spatula to fry the top as well. Once it is all golden brown, remove it from the oil and place on a paper towel.
- Cover in powdered sugar. You can top with any topping you desire! The possibilities are endless.
- Serve and enjoy! Bring the fair food home!
