Well, in my usual fashion, I failed to keep up with my plan to post a monthly Favorite Things post for March, but instead of copping out all together, I thought I’d at least share one favorite tool that came to mind recently… my Kitchenaid Immersion Blender!
I was thinking about this today when I made the Strawberry Puree for this Strawberry Cake recipe (one of my most popular recipes EVER!).
Here’s the thing with this blender. I really never thought I’d want an immersion blender (also sometimes called a stick blender). I didn’t have it on a wish list or think it was something I’d use all that often.
But then one Christmas a few years ago, my husband surprised me with it (along with some other small appliances). No, I was not upset – I’m that girl who loves getting kitchen gadgets or appliances for gifts. Seriously love it. And my hubby knows it 😉
So, back to the Immersion Blender. I really wasn’t sure I’d use it much. But then I was making potato soup one day and one of the kids said they wished the soup was more creamy and less chunky – so I pulled out the stick blender and made it smoother – right there on the stove in the soup pot.
I was SOLD!
These days I use it at least weekly. Off the top of my head, I use it for whipped cream (YES – so easy in that cup above to make a small amount!), strawberry or raspberry puree, potato soup, and homemade red sauce (my best friend lives in Italy – she taught me to make it – although she’d probably never stick a blender in it). I’ve also used it to make smoothies and other sauces!
If it broke tomorrow, I’d promptly order a new one without hesitation. I consider it a “staple” in my kitchen these days and I’m not sure how I lived without it before 😉
Anyway, I realize this is random but I just wanted to share. If you’ve ever had a doubt about the usefulness of an Immersion Blender, know that I highly recommend them!

Hi! I just wanted to know do always you leave the tops of your apples uncovered? I see so many others that say not to. I’m making my own apples now and am just gathering opinions. Thank you
