Description

Creamy, buttery mashed potatoes made right in your Instant Pot in about 16 minutes. This easy side dish frees up your stovetop and is perfect for weeknight dinners and holiday meals alike.

Ingredients

Units Scale
  • 4 pounds russet potatoes, peeled and cubed
  • 1 cup water
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon pepper
  • 2 teaspoons salt

Instructions

  1. Add the potatoes and water to the Instant Pot/pressure cooker pot.
  2. Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 6 minutes. The Instant Pot will take about 10-15 minutes to come to pressure before the 6-minute timer starts counting down.
  3. After 6 minutes, quick release the pressure from the pot and carefully remove the lid.
  4. Add the butter, ¾ cup milk, salt, pepper, and garlic powder to the pot and mash the potatoes with a potato masher until smooth. Add the remaining ¼ cup of milk if needed until the desired consistency is reached.
  5. Serve warm, topped with extra butter.
  6. Store any leftovers covered in the refrigerator.
  7. To reheat the leftovers, warm them in a large pot on the stovetop over medium heat. Add more milk to moisten and stir until smooth.

Notes

  1. Cooking times and the amount of water needed to cook the potatoes may vary slightly depending on your specific Instant Pot or pressure cooker. Consult the user’s manual and adjust as needed.
