Description

Instant Pot Taco Pasta is a quick and flavorful one-pot meal that combines the bold spices of taco seasoning with tender pasta, and ground meat. Made entirely in the Instant Pot, this dish is perfect for busy weeknights, as it cooks quickly and requires minimal cleanup. 

Ingredients

  • 1 tbsp olive oil
  • 1 White Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 1 Jalapeno, diced
  • 1 lb beef
  • 1 (1 oz) package taco seasoning
  • 1 (14.5 oz) can Fire Roasted Diced Tomatoes
  • 1 (24 oz) jar salsa
  • 1 cup water
  • 4 cups Farfalle Pasta (dry)
  • 1 cup Mexican Style Shredded Cheese (plus more for serving)

Instructions

  1. Set Instant Pot to “Saute” Mode.
  2. Let heat and add olive oil.
  3. Add onions and peppers and saute until soft and fragrant.
  4. Then add in ground beef and cook until no longer pink.
  5. Drain.
  6. Then add in taco seasoning, the can of tomatoes, salsa, and water and stir.
  7. Then top with dry pasta.
  8. Seal and lock the lid and set the Instant Pot to High Pressure cook for 12 minutes.
  9. Once finished cooking, manual release the steam.
  10. Then carefully unlock the lid and stir in cheese.
