Ingredients

Units Scale

For Pico de Gallo:

  • 2 Roma tomatoes, diced
  • 3 tablespoons finely diced red onion
  • 1/2-1 jalapeno, seeded and finely minced (leave seeds in for more spice)
  • 2 tablespoons cilantro, chopped
  • 1 1/2 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Mexican oregano (or regular dried oregano)

For Assembly:

  • 1 (32 ounce) bag frozen fries
  • 1 1/4 cups shredded colby jack cheese
  • 1/2 pound prepared carne asada meat
  • 1/3 cup sour cream or lime Mexican crema
  • 1/2 cup guacamole

Additional optional toppings: chopped cilantro, diced avocado, queso fresco

Instructions

  1. Prepare Pico de Gallo by placing tomatoes, red onion, jalapeno, cilantro, lime juice, salt, garlic powder, and mexican oregano in a medium sized bowl. Mix together. Let marinate for 30 minutes minimum or overnight for best results.
  2. Prepare fries according to instructions on the back of the bag.
  3. Place the cooked fries in a baking dish and top with Colby Jack cheese and prepared carne asada.
  4. In the oven, broil fries with cheese and meat for 3-4 minutes or until the cheese has melted and meat has warmed up.
  5. Remove from the oven and top with sour cream (or lime crema), guacamole, and Pico de Gallo. Add any extra toppings like chopped cilantro, diced avocado, or queso fresco, if desired.
  6. Plate and serve warm.

Notes

*See ingredient notes in the blog post above.

  • Use Crispy Fries – The key to delicious carne asada fries is starting with crispy fries. Soggy fries won’t hold up under all the toppings.
  • Don’t Overload Too Soon – Wait until serving time to add the pico de gallo, sour cream, and guacamole. This keeps the fries crisp.
  • Warm the Meat – If your carne asada is refrigerated, warm it first before adding it to the fries.
  • Use Freshly Shredded Cheese – Freshly shredded cheese melts better than pre-shredded varieties and gives you the best melty cheese texture.
  • Make Plans for Leftovers – This recipe makes more pico de gallo than you’ll likely need for the fries. Save the extra for carne asada tacos, burritos, etc.
