Description

Easy Maple Glazed Carrots roasted in the oven, air fryer, or stovetop. A simple recipe with fresh herbs and pure maple syrup – perfect for holiday dinners and weeknight sides.

Ingredients

  • 2 lbs baby carrots
  • 1/4 cup maple syrup
  • 2 Tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon rosemary or thyme
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 425º
  2. Whisk maple syrup, butter, garlic, salt, pepper, and rosemary together until well mixed
  3. Add carrots and toss well
  4. Spread onto a parchment paper lined baking sheet
  5. Bake in oven for 20 minutes
  6. Remove and stir carrots around a bit to re-coat them, and turn them over
  7. Place back in oven and bake until carrots are tender and beginning to brown about 15 minutes
  8. Remove from oven and sprinkle with coarse salt if desired.

Notes

  • Use pure maple syrup (not imitation) for best flavor
  • Arrange carrots in a single layer for even roasting
  • Stir halfway through for even cooking and re-glazing
  • Works with baby carrots, whole carrots, or larger carrots cut in half
  • Stovetop option: Cook in large skillet over medium heat for 15-20 minutes
  • Air fryer option: 400°F for 12-15 minutes
  • Crock pot option: Low 3-4 hours or high 1.5-2 hours
  • Storage: Refrigerate in airtight container up to 4 days; reheat in 350°F oven for 10 minutes
