Description

Old-Fashioned Cucumbers and Onions is a classic cucumber and onion salad recipe made with crisp English cucumbers, sliced red onions, and a sweet and tangy vinegar mixture. This easy fresh cucumber salad is the perfect side dish for summer cookouts, potlucks, or any hot summer day. Made with simple ingredients and just a few minutes of prep, it’s a refreshing family favorite that’s even better after chilling in the refrigerator.

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 3/4 cup white vinegar
  • 3 English cucumbers, sliced
  • 1 red onion, thinly sliced

Instructions

  1. In a small pot over medium heat, whisk water, sugar, and vinegar just until the sugar is melted. Set aside to cool.
  2. In the meantime, slice the cucumbers and onions. Combine in a bowl.
  3. When the liquid mixture is cool, pour over the cucumbers and onions.
  4. Cover and refrigerate for at least 3 hours or overnight.
  5. Use a slotted spoon to serve.

Notes

TIPS

  • Use a bowl a little bigger than you think you need because the cucumbers release more liquid as they sit.
  • For easy slicing, use a mandolin or food processor.

 VARIATIONS

  • Regular cucumbers can be used instead of English cucumbers. The skin is a little tougher, so feel free to peel them if you prefer.
  • A Vidalia or sweet onion can be used in place of a red onion.
  • Throw in some crushed red pepper for a little heat.
  • Toss in some fresh dill or parsley.
  • Tomatoes are also delicious in this.
  • White vinegar can be replaced with apple cider vinegar or red wine vinegar.
  • The sugar can be replaced with a sugar substitute.
