- 10 oz dried pasta
- 1 tablespoon olive oil
- 1 lb boneless, skinless chicken breast
- Salt and pepper, to taste
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 3/4 teaspoon Italian seasoning
- 1 cup parmesan, grated
- 1/3 cup sun-dried tomatoes, julienne or diced
- Fresh basil (optional)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Meanwhile, cut chicken into 1-inch cubes. Season with salt and pepper. In a large skillet over medium-high heat, add the olive oil and then the chicken. Cook the chicken until no longer pink and a thermometer inserted into the center reads 165°F. Remove from the pan and set aside.
- In the same skillet you used to cook the chicken, reduce the heat to medium and add the butter. When it melts, add the garlic and sauté for 1-2 minutes.
- Add the flour and whisk about 1 minute or until no visible flour remains. Then slowly whisk in the chicken broth, adding a small amount at a time. Once completely incorporated, whisk in the cream and Italian seasoning.
- Bring to a simmer then reduce heat to medium-low whisking often for 5-7 minutes until thickened slightly. Stir in the parmesan. Once melted, add the sun-dried tomatoes. Then stir in the cooked pasta and chicken. Salt and pepper to taste.
- Garnish with basil and Enjoy!
Notes
- Have all the ingredients measured and ready when starting the sauce. Some steps are only a minute or two, so this will help to keep things moving.
- The heavy cream is essential to a thick, creamy sauce. Milk is not a good substitute.
- I used farfalle (bow tie pasta) when I make this Marry Me Pasta, but other great options are penne, ziti, or rigatoni. A thicker noodle is best, though, to stand up to the thick sauce.
- Boneless skinless chicken thighs can also be used instead of the chicken breasts.
- If you like, you can sauté some diced onion and add that to your pasta.
- This is an easy recipe to change up – faeel free to throw in some vegetables, such as a cup of spinach, peas, corn, broccoli, or carrots for a complete meal.
- The basil can be replaced with parsley.
- Add some heat with a little cayenne or red pepper flakes.
- Give the dish a little smokiness with some smoked paprika.
- To make this dish even easier, you can use leftover chicken, frozen cooked chicken or a rotisserie chicken.
- You can use oil from the sun-dried tomatoes or vegetable oil instead of the olive oil.
- Feel free to stir some basil into the sauce as well as adding it as a garnish.
- To increase the tomato flavor, add 1 tablespoon of tomato paste.
