My cousin Beau sent me a message a few weeks ago asking if I could do a birthday cake for his sweet wife. Since I just adore Beau and his wife, I said, “Of course!!”. Rosemary (not to be confused with me, Rose Marie) is a huge fan of (and graduate of) Mississippi State University, so he wanted a cake to reflect that!
Actually, people sometimes do confuse Rosemary and I. My maiden name is Rose Marie Hawley. Her married name is Rosemary Hawley. My Mama (Mrs. Hawley) was a teacher at Franklin High School for years and Rosemary is a teacher there now. Oh, and I graduated from there. Did you get all that?
Anyway, just this past week Rosemary got a call from a sweet lady trying to reach Mrs. Rose Hawley to order a 2 tiered birthday cake. Beau said she almost took the order…. ha!
Anyway… this cake was all chocolate cake covered and filled with vanilla buttercream. The MSU decorations are all made from homemade marshmallow fondant and I specifically ordered maroon gel coloring so that I could get this cake just right for a devoted MSU fan (otherwise, I would’ve had no idea what colors to mix and match to get maroon)! Happy Birthday Rosemary!!

I just wanted to send you a note and tell you how inspired I am by your blog. You are an amazing baker and cake decorator! I started out trying to make and sell cakes to supplement mine and my husbands income and was not charging enough so I quickly burned out. After reading your post about what to charge I think I will give it another shot. Everything on your site is so helpful and you explain everything so well. Rose, what about deposits? Do you ask for a deposit from new customers that you haven’t done business with? This is for birthday cakes. I would always get a deposit on a wedding cake. Also, where do you get your cake boards and boxes?
How did you make the varsity letter “M” on the cake? It looks great!!
I printed an “M” from a logo I found online. To make it with fondant, I rolled out the fondant, laid wax paper over it, then laid the printed “M” over that and cut it out with an Xacto knife.
Awesome cake!!!

I need to make the “M” logo for a grooms cake I am doing. I have only worked with fondant once. My “M” needs to stand up on top of the cake. How do I get it to stand alone? Isn’t the fondant going to be too soft for that? Suggestions please.
I’d actually recommend gum paste instead of fondant. Or you’ll need to add quite a bit of Tylose to your fondant to get it to dry hard.
