These slow cooker mashed potatoes are creamy, buttery, and easy to make with Yukon Gold potatoes. A hands-off side dish that frees up space on the stove!

5poundsYukon Gold potatoes, peeled and cut into 1-inch chunks
Add the cubed potatoes to the bottom of a greased, large slow cooker
Pour the broth over the potatoes, place the lid on the pot, and cook on HIGH for 4 hours.
About halfway through, lift the lid of the and lay the stick of butter on top of the potatoes. Place the lid back on and continue cooking.
After 4 hours, check that the potatoes are fork-tender, then mash them with a potato masher.
Add the half and half, sour cream, and chives to the pot and continue mashing until well combined and few lumps remain. Season with salt and pepper to taste and mix/mash once more.
Serve warm topped with extra butter and dried chives.
Notes
Cooking time can vary by slow cooker. Newer models tend to run hotter, so start checking at 3 hours.
To cook on LOW, allow about 6-8 hours and add the butter around the halfway point.
Store leftovers in an airtight container in the fridge for 3-4 days.
