  • 2 cups strawberries, capped and sliced
  • 2 cups rhubarb, sliced to about 1/2 inch pieces
  • 2 Tablespoons granulated sugar
  • 1/2 cup butter
  • 1 cup flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F.
  2. Place butter in a 9×13-inch baking dish and put it in the oven to melt while it preheats.
  3. In a large bowl, combine the strawberries, rhubarb, and 2 tablespoons sugar. Stir to coat and set aside.
  4. In a separate large mixing bowl, combine flour, 1 cup sugar, baking powder, and salt.
  5. Stir in milk and vanilla until smooth.
  6. Carefully remove the baking dish with melted butter from the oven.
  7. Pour the batter into the prepared baking dish without stirring.
  8. Spoon the fruit mixture evenly over the batter. Do not stir.
  9. Bake for 40–45 minutes, or until the top is golden brown and the cobbler is set.

Notes

    • If using frozen fruit, thaw it first and drain off any excess liquid so your fruit filling doesn’t turn out too watery.
    • Add a splash of lemon juice or a little orange zest to brighten the strawberry rhubarb filling.

    • Try swapping part of the sugar for brown sugar for added depth of flavor.

    • Sprinkle coarse sugar over the top of the cobbler before baking for extra crunch.

    • Want a crumble topping instead? You can mix cold butter into a flour mixture until you get coarse crumbs.
