Description

Make festive Stained Glass Cookies with colorful candy centers! This easy recipe creates beautiful sugar cookies with colorful centers made from Jolly Ranchers, making them perfect for Christmas, holidays, parties, and any occasion. 

Ingredients

  • 1/2 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 1 large egg
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 24 hard candies such as Jolly Rancher Candy or Lifesavers

Instructions

  1. In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  2. Add the egg, vanilla extract, and lemon zest. Mix until everything is well combined.
  3. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the butter mixture and mix just until a dough forms. Cover and chill the dough for at least 1 hour.
  4. When you’re ready to bake, line two large baking sheets with parchment paper and set aside.
  5. On a lightly floured surface, roll the dough out to about ¼-inch thick. Use a large flower-shaped cookie cutter to cut out the cookies and place them on the prepared baking sheets. Then use a smaller flower cutter to cut out the center of each cookie.
  6. Separate the hard candies by color and place them into small zip-top bags. Using a rolling pin, gently crush the candies into small pieces. You want little chunks, not candy dust.
  7. Fill the cut-out center of each cookie with the crushed candy pieces.
  8. Preheat your oven to 350°F. While the oven is heating, place the baking sheets in the refrigerator for about 15 minutes. This helps the cookies hold their shape while baking.
  9. Bake for about 10 minutes, or until the cookie edges are lightly golden and the candy has completely melted.
  10. Let the cookies cool completely on the baking sheet before attempting to remove them. If they’re still warm, the candy center may stick to the parchment paper and pull away from the cookie.
