I first made a cake like this back in September of 2010. It was for a distant cousin and I don't remember where she got the picture... but I remember not being sure how I was going to pull it off because it had this intricate lace (see pics of the first cake below).
Then I found this Martha Stewart Doily Lace Paper Punch and it was identical to the lace on the cake.  So I ordered the paper punch and thought it would be easy.
It was not. If you decide to do a cake like this... here are couple of tips. For everything that you want to add the lace to, use gum paste instead of fondant.  You'll have to roll it paper-thin (literally!) to slip it into the paper punch. Also, you'll want to work in small sections.
I think the punch will actually do about 3-4 inches at a time, then you have to slide it down, line it up and punch again. If you have a really long piece of gum paste, you will stretch or tear it! Or at least I did... about a dozen times! Anyway...
For the bouquet, I made tiny ribbon roses and bunched them together. I love the way they look!   Anyway, here are a couple of pictures from my first wedding dress cake...

I cut the strips with a knife and just layered them... no folding on this one!
