When summertime arrives with lots of sunshine and heat waves – I always start to crave cool and bright flavors! This sweet and tart White Chocolate Lemon Skittles Fudge fulfills all of my cravings. It’s lemony and sweet, creamy but with texture… it’s absolutely perfect. Oh, and it’s easy; that’s always a fun bonus!
When I decided to make lemon fudge for the very first time, I felt like the one thing missing from this delicious dessert was texture. That’s where the Skittles come in! They add a little more sweet & tart to the lemon fudge, while also adding some extra chewy & crunchy texture! I’m pretty sure Skittles America Mix would make any summer dessert a little sweeter. Wouldn’t you agree?!
Now… let’s get to it and make this easy-peasy dessert!
White Chocolate Lemon Skittles Fudge
Start by getting your ingredients together. Here’s what you’ll need (only 4 ingredients!):
- 3 cups white chocolate chips
- 1 (14 ounce) can of sweetened condensed milk
- 2 teaspoons lemon extract
- 1 cup Skittles America Mix (divided)
You may not believe this, but I actually ordered my Skittles America Mix on Amazon! Before I get too far in, let me tell you how much I love Amazon. I’m actually addicted to Amazon if you want to know the truth. With Amazon Prime, Amazon Subscribe & Save and Amazon Pantry… I pretty much never have to leave home to get what I need and get it fast!
Okay, now that I’ve embarrassed myself by confessing my love of Amazon, let’s get back to the recipe!
In a medium saucepan, mix together the white chocolate chips, sweetened condensed milk and lemon extract. Cook over low heat, stirring constantly until you have a smooth creamy mixture. It’s really easy to scorch this recipe so seriously… don’t look away!
Once it’s melted, stir in most of the candy (approximately 3/4 cup). Oh – and aren’t the Skittles America Mix so much fun? They’re perfect for the upcoming 4th of July holiday – but you could use them all summer long to celebrate America and your patriotism!
With the Skittles America Mix all mixed in, spread the fudge into a lined 8×8 cake pan. I prefer to line the pan with parchment paper, but you can also line your pan with foil if you want. Sprinkle your remaining Skittles America Mix over the top!
Pop the pan in the frig for at least 2 hours or let the fudge set up overnight. When you’re ready to serve it, lift the fudge out of the pan, slice it up into small squares and enjoy!
