Description

This Bruschetta Pasta Salad is one of my favorite easy summer recipes because it combines everything I love about traditional bruschetta with a fresh and flavorful pasta salad. With juicy tomatoes, lots of fresh basil, garlic, olive oil, and Parmesan cheese, and pasta, of course, this Bruschetta Pasta recipe is simple, colorful, and packed with fresh flavor.

Ingredients

Units Scale
  • 4 cups cooked pasta
  • 1-2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 minced garlic clove (or 1 teaspoon minced garlic)
  • 1 1/2 cups diced tomatoes or cherry tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup basil, loosely packed
  • Parmesan cheese, to taste

Instructions

  1. Cook your pasta according to package directions. If preparing immediately, do not rinse the pasta. If planning to prepare later and serve cold, rinse well before storing pasta in the fridge.
  2. Chiffonade* the basil by stacking several leaves and then rolling into a tube shape. Use a sharp knife to cut the basil into strips.
  3. Place the pasta in a large bowl and pour on the olive oil and balsamic vinegar. Taste and adjust the olive oil to personal preferences.
  4. Stir in the minced garlic until evenly distributed.
  5. Add the diced tomatoes, red onion, and basil. Stir until well mixed, being careful to avoid bruising the tomatoes and basil.
  6. Season to taste with Parmesan cheese.
  7. This recipe can be served warm or cold.

Notes

    • This recipe makes approximately 6-7 cups of Bruschetta Pasta Salad. It serves about 6 people as a side dish or 4 people as a light main dish.
    • To “chiffonade” the basil means to stack the basil leaves on top of each other, roll them up tightly like a little tube, then use a sharp knife to slice them into thin strips.
    • Add mozzarella pearls for bruschetta pasta salad with mozzarella.

    • Grilled chicken makes this bruschetta pasta a filling main dish.

    • A drizzle of balsamic glaze adds extra flavor and makes the presentation prettier.
