Best Pasta for Bruschetta Pasta Salad

Short pasta shapes work best for this bruschetta pasta recipe because they hold onto all the fresh ingredients and dressing. Bowtie pasta, rotini, pasta shells, or penne are all great choices.

Cook the pasta just until al dente so the salad stays fresh and flavorful instead of soft and mushy.

How to Make Bruschetta Pasta Salad

  1. Cook the pasta according to package directions in a large pot of salted water until al dente.
  2. Drain the pasta. If serving warm, place it directly into a large bowl. If serving cold, rinse the pasta with cold water before refrigerating.
  3. Chiffonade the basil – which means to stack the basil leaves, roll them tightly, and slice into thin strips.

Bruschetta Pasta Salad with Mozzarella

For an even heartier version, add mozzarella balls or diced fresh mozzarella cheese. And if you want protein, add diced grilled chicken.

Tips for the Best Bruschetta Salad Recipe

  • Use ripe, fresh tomatoes for the best flavor.
  • Fresh basil makes a huge difference — skip dried basil if possible.
  • Add a drizzle of balsamic glaze before serving for extra flavor.
  • Taste before serving and adjust the olive oil or parmesan cheese as needed.
  • Fresh cracked black pepper also adds an extra little pop of flavor
  • This bruschetta salad tastes even better after the flavors have had time to blend together.

Storage Suggestions

Store leftover Bruschetta Pasta Salad in an airtight container in the refrigerator for up to 3 days. This pasta salad is actually really good the next day because the flavors have more time to blend together.

Keep in mind that the pasta may absorb some of the olive oil and balsamic vinegar as it sits. Before serving leftovers, give the salad a good stir and add an extra drizzle of olive oil if needed to freshen it back up.

For the best texture, I recommend adding fresh basil and Parmesan cheese right before serving if you’re making it ahead for meal prep or a party.

Whether you call it bruschetta pasta, pasta bruschetta, or even bruchetta pasta, this easy dish is always a crowd favorite. It can be served warm, chilled, or at room temperature, making it perfect for cookouts, potlucks, light lunches, or busy weeknight dinners.

Description

This Bruschetta Pasta Salad is one of my favorite easy summer recipes because it combines everything I love about traditional bruschetta with a fresh and flavorful pasta salad. With juicy tomatoes, lots of fresh basil, garlic, olive oil, and Parmesan cheese, and pasta, of course, this Bruschetta Pasta recipe is simple, colorful, and packed with fresh flavor.

Ingredients

Units Scale
  • 4 cups cooked pasta
  • 12 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 minced garlic clove (or 1 teaspoon minced garlic)
  • 1 1/2 cups diced tomatoes or cherry tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup basil, loosely packed
  • Parmesan cheese, to taste

Instructions

  1. Cook your pasta according to package directions. If preparing immediately, do not rinse the pasta. If planning to prepare later and serve cold, rinse well before storing pasta in the fridge.
  2. Chiffonade* the basil by stacking several leaves and then rolling into a tube shape. Use a sharp knife to cut the basil into strips.
  3. Place the pasta in a large bowl and pour on the olive oil and balsamic vinegar. Taste and adjust the olive oil to personal preferences.
  4. Stir in the minced garlic until evenly distributed.
  5. Add the diced tomatoes, red onion, and basil. Stir until well mixed, being careful to avoid bruising the tomatoes and basil.
  6. Season to taste with Parmesan cheese.
  7. This recipe can be served warm or cold.
