These Butterscotch Pecan Cookies are the perfect combo of salty and sweet. These cookies are loaded with chopped pecans and butterscotch chips and their soft gooey & buttery flavor will melt in your mouth.
Ingredients:
1 1/4 stick butter - softened
1 cup brown sugar - packed
1 teaspoon vanilla extract
2 eggs
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon sea salt
1 3/4 cup butterscotch chips
1 cup chopped pecans
Instructions:
Preheat your oven to 350 degrees F and prepare a baking sheet with nonstick spray and set aside.
In the bowl of a stand mixer equipped with the paddle attachment add the butter and brown sugar and cream until smooth.
Add vanilla extract and eggs and mix until combined.
In a separate medium bowl, add flour, baking soda and powder, and salt and whisk.
Add dry ingredients into the mixer bowl and combine until a dough forms.
Add in butterscotch chips and pecans and mix until just combined.
Make about 3 tablespoon balls of dough and place about 1 ½ inches apart on the baking sheet and bake for 9-10 minutes or until golden brown. Allow to cool completely and enjoy!
