I cannot believe there are only a few more days until Christmas. I don't know if its' because Thanksgiving was so late in November or we've just had a crazy amount of busy-ness this year, but I blinked and now it's mid-December.
And I'm feeling the crunch.
I do have my tree up and my Christmas cards mailed, but that's about it. The shopping is not finished. The house is not as decorated as I like. I haven't wrapped the gifts I do have. I'm not even sure I have wrapping paper.
Regardless of all of that, at least I have cookies!!

I love for my cookies to have texture and these cookies have everything I dream of! They're soft, gooey, crunchy and all the yum!
One of my other most favorite of all time cookies are these Oatmeal Pecan Cookies and wow... so much love!
My favorite way to eat these cookies is when they're still warm and melty. With a tall glass of ice-cold milk... or if I'm being honest, a Diet Dr. Pepper 😊

Ingredients
Ingredients:
1 ¼ stick butter - softened
1 cup brown sugar - packed
1 teaspoon vanilla extract
2 eggs
2 ½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon sea salt
1 ¾ cup butterscotch chips
1 cup chopped pecans
Instructions
Instructions:
Preheat your oven to 350 degrees F and prepare a baking sheet with nonstick spray and set aside.
In the bowl of a stand mixer equipped with the paddle attachment add the butter and brown sugar and cream until smooth.
Add vanilla extract and eggs and mix until combined.
In a separate medium bowl, add flour, baking soda and powder, and salt and whisk.
Add dry ingredients into the mixer bowl and combine until a dough forms.
Add in butterscotch chips and pecans and mix until just combined.
Make about 3 tablespoon balls of dough and place about 1 ½ inches apart on the baking sheet and bake for 9-10 minutes or until golden brown. Allow to cool completely and enjoy!
