Make dinner easy tonight with this TikTok Viral Boursin Cheese Pasta with roasted cherry tomatoes, spinach, garlic, and creamy Boursin cheese. A simple 45-minute vegetarian pasta dinner that’s rich, flavorful, and perfect for busy weeknights.

Ingredients

  • 2 cups spinach leaves, roughly chopped
  • 12 ounces cherry tomatoes
  • 1 tablespoon minced garlic cloves
  • 2 tablespoons olive or avocado oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 round of Boursin cheese (I used Garlic & Fine Herb)
  • 8 ounces bowtie pasta
  • 2 tablespoons heavy cream
  • Parmesan, optional

Instructions

  1. Preheat the oven to 400°F.
  2. Add the spinach, tomatoes, garlic, salt, pepper, and oil to a large bowl and toss to coat the vegetables with oil.
  3. Spread the prepared vegetables out on a foil-lined baking sheet and place the Boursin in the center.
  4. Roast vegetables and Boursin cheese in the preheated oven for about 28-30 minutes, or until the cheese is melted and the tomatoes start to burst open.
  5. While the vegetables are in the oven, boil the pasta in a large pot of water until al dente. Drain the water from the pasta and set aside.
  6. As soon as the cheese and vegetables are out of the oven, combine them with the pasta and heavy cream in a large bowl, stirring to fully coat the pasta in the cheese mixture.
  7. Serve warm with a sprinkle of Parmesan cheese if desired.

Notes

  • Don’t overcook the pasta. Al dente pasta holds up best when mixed with the creamy sauce.
  • Use fresh spinach for the best flavor and texture.
  • Stir everything together while the cheese is still hot so it melts smoothly into the pasta.
  • Reserve a little pasta water if you’d like a thinner sauce.
