Description

Roasted Garlic Parmesan Potatoes are the perfect side dish for just about anything!  They’re crispy on the outside, tender on the inside, and loaded with bold flavor from garlic, parmesan cheese, and simple pantry spices. This may become your new favorite way to serve potatoes on busy nights!

Ingredients

  • 1.5 pounds of baby red potatoes, halved
  • 1/4 cup olive oil
  • 6 garlic cloves, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley, optional

Instructions

  1. Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. Bring a large pot of salted water to a boil, add the potatoes, and cook for 10 minutes. Drain the potatoes and transfer them to a large mixing bowl. Toss with olive oil, garlic, onion powder, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread the potatoes evenly on the prepared sheet pan and bake for 40 to 45 minutes, until golden, brown, and tender.
  4. Sprinkle Parmesan cheese and parsley on top before serving.

Notes

  • Don’t skip boiling: Parboiling helps create that soft inside and crispy outside.
  • Use a single layer: Crowding the pan will steam the potatoes instead of roasting them.
  • Flip for extra crispiness: Not required, but flipping halfway through can give more even browning.
  • Grate your own Parmesan cheese: It melts better and gives a creamier finish.
