Ingredients
Scale
- 8 medium sized apples, cored, peeled, and diced small
- 3/4 cup brown sugar, packed
- 1/2 stick (4 tablespoons) butter
- 1/2 tablespoon ground cinnamon
- Juice of 1/2 lemon
To thicken the dip:
- 1/4 cup water
- 1 tablespoon cornstarch
Instructions
- Add all of the ingredients to a 3 quart pot and place over medium heat on the stove.
- Stir to combine and coat the diced apples with the cinnamon and sugar.
- Bring the mixture to a boil.
- Reduce the heat to medium, and continue cooking for 10 minutes, or until the apples are softened and the liquid has become a deep caramel brown color.
- Make a slurry of water and cornstarch, then stir it into the apple mixture.
- Reduce the heat to medium-low, and allow the mixture to simmer for a few minutes until thickened.
- Remove from heat and allow to cool.
- Serve with cinnamon sugar tortilla chips.
Notes
- You can use any variety of apple that you prefer. I used Gala.
- If you don’t have cornstarch, you can use an equal amount of flour to thicken your dip. Just remember to make a slurry first, so that you don’t end up with chunks of hardened goo in your dip.
- The dip will continue to thicken upon cooling. If you find that it's too thick, you can loosen it up with a little bit of water. Add about a tablespoon at a time until you get it loosened to your desired thickness.
- Store leftovers covered tightly for up to 5 days in the fridge.
- This recipe makes a pretty delicious apple pie filling too!
