Description

If you’re a pickle lover, this Dill Pickle Pizza Recipe might just become your new favorite pizza night dinner. Made with a crispy low-carb tortilla instead of traditional homemade pizza dough, this easy white pizza is loaded with ranch dressing, mozzarella cheese, juicy rotisserie chicken, crispy bacon, dill pickle slices, and fresh green onions. It bakes in just 5 minutes, making it one of the quickest meals you’ll ever make and the perfect low carb lunch.

Ingredients

Units Scale
  • 2 tortillas (Carb Balance Wraps for low carb)
  • 8 tablespoons of ranch dressing (Skinny Girl Ranch is a great low-carb option)
  • 1 cup of shredded Mozzarella Cheese
  • 1 cup of Shredded Rotisserie Chicken
  • 1/2 cup of sliced Dill Pickles
  • 1/2 cup of Crumbled Cooked Bacon
  • 1/4 cup of Diced Green Onions, optional
  • 1 teaspoon of Dill Weed
  • Extra ranch (for topping drizzle)

Instructions

  1. Preheat oven to 375°F and lightly grease a baking pan or line it with parchment paper.
  2. Place the tortillas on the baking sheet and spread 4 tablespoons of ranch dressing evenly over to the top of each tortilla, leaving a small border around the edges.
  3. Sprinkle the shredded mozzarella cheese evenly over both wraps.
  4. Top each pizza with the dill pickle slices, dividing them evenly between the two pizzas.
  5. Evenly distribute the shredded chicken and crumbled bacon over the pickles.
  6. Lightly sprinkle the tops with dill weed, then place the pizzas on the prepared baking pan.
  7. Bake for 5 minutes, or until the cheese is melted and the edges of the wraps are lightly golden and crisp.
  8. Remove from the oven and top with the diced green onions. Drizzle with additional ranch dressing, if desired.
  9. Slice and serve immediately. Each pizza makes one generous serving. Enjoy!

Notes

  • Pat your dill pickle slices dry with paper towels to remove excess dill pickle juice before adding them to the pizza.
  • Don’t overload the top of the pizza with toppings or the wrap may become soft.
  • Bake directly on a pizza pan, pizza stone, or sheet pan for the crispiest crust.
  • Let the pizza cool for 2 to 3 minutes before slicing.
  • Fresh dill sprinkled on top after baking adds even more flavor.
  • Great for low-carb lifestyles and many keto-friendly meal plans.
