Description

Easy Red Velvet Peppermint Cookies are amazing holiday cookies that come together in under 10 mins when you start with a red velvet cake mix! They’re festive with their deep red color and peppermint flavor and when dipped in melted white chocolate and sprinkled with crushed peppermint – they’re perfect for Christmas or Valentine’s Day!

Ingredients

  • 15.25 oz red velvet boxed cake mix (dry mix)
  • 1/2 cup canola or vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat oven to 350 degrees F. Line 2 cookie sheets with parchment paper and set aside.
  2. Mix cake mix, oil, and eggs in a large bowl until combined. Scoop or spoon the cookie dough onto the parchment-lined cookie sheets, leaving 1 1/2 inches between scoops.
  3. Bake for 10-12 minutes, rotating sheets once during baking. Let cool on cookie sheets for 15 minutes before transferring to a wire rack to finish cooling.
  4. Once the cookies have completely cooled, microwave the white chocolate at 50% power for 30 seconds. Stir the chocolate well and repeat heating in 30-second increments until the chocolate is smooth.
  5. Dip 1/2 of the cookies in the melted chocolate and immediately sprinkle with crushed candy canes. Place cookies on wax paper lined tray until chocolate sets.
