- Large Eggs, at room temperature
- White Chocolate Chips or White Almond Bark
- Crushed Candy Canes
How to Make Red Velvet Peppermint Cookies
- Preheat oven to 350°F.
- Line a cookie sheet with parchment paper and set aside.
- Mix cake mix, oil and each large egg in a large bowl on medium speed until combined. Scrape down the sides of bowl as needed.
- Spoon or scoop dough onto the parchment lined cookie sheets leaving 1 ½" between scoops.
- Bake for 10-12 minutes rotating sheets once during baking.
- Let cool on cookie sheet for 15 minutes before transferring to a wire rack to finish cooling.
- Once red velvet cake mix cookies have completely cooled, microwave the white chocolate at 50% power for 30 seconds. Stir the chocolate well and repeat heating in 30 second increments until chocolate is
smooth. - Dip ½ of the cookies in the melted chocolate and immediately sprinkle with crushed candy canes.
- Place cookies on wax paper lined tray until chocolate sets.
