How to Make Red Velvet Peppermint Cookies

  1. Preheat oven to 350°F.
  2. Line a cookie sheet with parchment paper and set aside.
  3. Mix cake mix, oil and each large egg in a large bowl on medium speed until combined. Scrape down the sides of bowl as needed.
  4. Spoon or scoop dough onto the parchment lined cookie sheets leaving 1 1/2″ between scoops.
  5. Bake for 10-12 minutes rotating sheets once during baking. 
  6. Let cool on cookie sheet for 15 minutes before transferring to a wire rack to finish cooling.

  1. Once red velvet cake mix cookies have completely cooled, microwave the white chocolate at 50% power for 30 seconds. Stir the chocolate well and repeat heating in 30 second increments until chocolate is
    smooth. 
  2. Dip 1/2 of the cookies in the melted chocolate and immediately sprinkle with crushed candy canes. 
  3. Place cookies on wax paper lined tray until chocolate sets.
  4. Enjoy this perfect holiday treat!
