Description

A fool-proof method for perfect sushi rice every time… sticky, perfectly seasoned, and made right in your Instant Pot!

Ingredients

Units Scale
  • 2 cups short-grain Japanese rice
  • 2 cups water
  • 1/4 cup white wine vinegar (optional and not traditional, but we love the rice with this addition!)
  • 1/4 cup rice vinegar (seasoned or unseasoned - we like the extra flavor of seasoned, but either works)
  • 1 1/2 tsp. salt
  • 2 Tbsp. sugar

Instructions

  1. Place the rice in a fine-mesh strainer and rinse under cold running water for about 2 minutes. Let it drain for a few minutes.

  2. Add the rice and water to the Instant Pot. Select the Rice setting and cook on low pressure for 12 minutes. When the cooking time ends, let the pressure release naturally for 10 minutes, then carefully release any remaining pressure.

  3. While the rice cooks, combine the white wine vinegar, seasoned rice vinegar, salt, and sugar in a small bowl. Microwave for 1 minute, then stir until the sugar and salt are completely dissolved.

  4. Transfer the cooked rice to a glass dish. Pour the vinegar mixture over the rice and gently stir with a wooden spoon until evenly combined.

  5. Let the rice cool before using it to make your favorite sushi rolls.

Notes

  • Rinse the rice until the water runs mostly clear. This washes away the extra starch and it’s the secret to sticky rice that isn’t gummy!
  • The amount of vinegar seems like a lot, but that’s exactly what gives sushi rice that sweet-tangy restaurant flavor. Try it as written before you make changes!
  • Use a glass or wooden dish for mixing. Metal can react with the vinegar and change the flavor.
  • Let the rice cool to room temperature before rolling. Warm rice will make your nori soggy.
  • Short-grain Japanese rice is a must here. Long-grain rice just won’t hold together in rolls.
  • Leftovers keep in an airtight container in the fridge up to 2 days. The rice firms up when it’s cold, so sprinkle it with a little water and warm it gently to soften it back up.
