Instant Pot Sushi Rice Recipe (Perfect Every Time!)
This Instant Pot Sushi Rice is the easiest way to make perfectly seasoned, sticky sushi rice at home! Made with short-grain Japanese rice and a sweet-tangy vinegar mixture, it comes out fool-proof every single time… no rice cooker needed. Whether you’re making homemade sushi rolls, poke bowls, or just a yummy side dish, this recipe is budget-friendly, beginner-friendly, and guaranteed to turn out perfect rice with zero guesswork!

Instant Pot Sushi Rice
For the most part, every person in my family (immediate and extended) loves sushi. Only one or two members out of the 31 of us don’t eat it.
So back during C*vid, we were all missing our sushi. And missing each other. To combat both, I decided to host a sushi party where we learned to make it ourselves. And we loved it!
The biggest hurdle? I had no idea how to make sushi rice. But with a little online research, I came up with a great recipe and even better – I made it in my Instant Pot.
Here’s what I’ve learned over the last 5+ years… making sushi at home is not as hard as you might imagine. And it saves money. And it’s fun. Plus everybody can customize their sushi and make it just how they like it!
Now, fair warning… the amount of vinegar in this recipe might make you raise an eyebrow. It seems like a lot! But trust me on this one. That vinegar mixture is exactly what gives sushi rice that amazing sweet-tangy flavor you get at your favorite sushi restaurant. Don’t skip it and don’t skimp on it!

Why You’ll Love This Recipe
It’s completely fool-proof. No babysitting a pot on the stove, no peeking under the lid, no mushy or crunchy rice. The Instant Pot takes all the guesswork away… my favorite kind of cooking!
It saves you money. Sushi rolls at a restaurant add up so fast. Making them at home costs a fraction of the price, and this rice is where it all starts.
It works for more than sushi. Use it for homemade rolls, poke bowls, rice bowls, or even as a side dish with teriyaki chicken. It’s easy peasy and so versatile!
Tools Needed
- Instant Pot (or any electric pressure cooker)
- Fine mesh strainer
- Small microwave-safe bowl
- Glass dish (for cooling the rice)
- Wooden spoon or rice paddle
How to Make Instant Pot Sushi Rice
- In a fine mesh strainer, rinse the rice under running water for about 2 minutes. Then let it dry for a few minutes. Don’t skip the rinsing… it washes away extra starch so your rice isn’t gummy!
- Add the rice and water to your Instant Pot. Use the rice setting… low pressure for 12 minutes.
- Once the cook time is complete, allow the pressure to naturally release, about 10 minutes.
- Meanwhile, in a small bowl, combine the white wine vinegar, seasoned rice vinegar, salt, and sugar. Microwave for 1 minute, then stir until everything dissolves.
- Transfer the cooked rice to a glass dish.
- Pour the vinegar mixture over the rice, then use a wooden spoon to gently mix until well combined. Be gentle here… you want to coat the rice, not mash it!
- Let the rice cool, then use it in your favorite sushi rolls. Enjoy!

Pro Tips
- Rinse, rinse, rinse! Rinsing the rice until the water runs mostly clear for that perfect sticky-but-not-gummy texture.
- Use a glass or wooden dish for mixing… metal can react with the vinegar and affect the flavor.
- Fan the rice while it cools (or just let it rest uncovered) for that glossy, restaurant-style finish.
- Let the rice cool before rolling sushi. You don’t want it cold, but rice that’s too warm will make your nori soggy!
Variations
- Poke bowls – skip the rolling and pile your favorite toppings right on a bowl of this rice.
- Rice bowls – it makes a delicious base for teriyaki chicken or grilled veggies.
- Milder flavor – you can cut the vinegar mixture in half the first time if you’re nervous, but I really encourage you to try it as written… It’s SO good!
Storage Instructions
Sushi rice is definitely best the day it’s made, but leftovers can be stored in an airtight container in the fridge for up to 2 days. The rice will firm up when chilled, so sprinkle it with a little water and warm it gently in the microwave to soften it back up.
FAQ
Do I have to use short-grain rice? For real-deal sushi rice, yes! Short-grain Japanese rice has the starch that makes it sticky enough to hold together in rolls. Long-grain rice just won’t give you the same result.
Is that really the right amount of vinegar? Yes! It seems like a lot, but that’s what creates that amazing sweet-tangy sushi flavor. Trust me on this one… try it as written before making changes!
Can I make this without an Instant Pot? Absolutely. You can cook the rice on the stovetop or in a rice cooker according to the package directions, then season it with the same vinegar mixture. The Instant Pot just takes away all the guesswork!
Can my kids help with this recipe? Yes! Older kids can easily handle rinsing the rice and stirring in the vinegar mixture. Rolling sushi together makes such a fun family activity too!

Instant Pot Sushi Rice Recipe (Perfect Every Time!)
Description
A fool-proof method for perfect sushi rice every time… sticky, perfectly seasoned, and made right in your Instant Pot!
Ingredients
- 2 cups short-grain Japanese rice
- 2 cups water
- 1/4 cup white wine vinegar (optional and not traditional, but we love the rice with this addition!)
- 1/4 cup rice vinegar (seasoned or unseasoned – we like the extra flavor of seasoned, but either works)
- 1 1/2 tsp. salt
- 2 Tbsp. sugar
Instructions
-
Place the rice in a fine-mesh strainer and rinse under cold running water for about 2 minutes. Let it drain for a few minutes.
-
Add the rice and water to the Instant Pot. Select the Rice setting and cook on low pressure for 12 minutes. When the cooking time ends, let the pressure release naturally for 10 minutes, then carefully release any remaining pressure.
-
While the rice cooks, combine the white wine vinegar, seasoned rice vinegar, salt, and sugar in a small bowl. Microwave for 1 minute, then stir until the sugar and salt are completely dissolved.
-
Transfer the cooked rice to a glass dish. Pour the vinegar mixture over the rice and gently stir with a wooden spoon until evenly combined.
-
Let the rice cool before using it to make your favorite sushi rolls.
Notes
- Rinse the rice until the water runs mostly clear. This washes away the extra starch and it’s the secret to sticky rice that isn’t gummy!
- The amount of vinegar seems like a lot, but that’s exactly what gives sushi rice that sweet-tangy restaurant flavor. Try it as written before you make changes!
- Use a glass or wooden dish for mixing. Metal can react with the vinegar and change the flavor.
- Let the rice cool to room temperature before rolling. Warm rice will make your nori soggy.
- Short-grain Japanese rice is a must here. Long-grain rice just won’t hold together in rolls.
- Leftovers keep in an airtight container in the fridge up to 2 days. The rice firms up when it’s cold, so sprinkle it with a little water and warm it gently to soften it back up.
