- (2) 8 oz. box of Cream Cheese, softened to room temperature
- 1 cup of Powdered Sugar
- 2 teaspoons of Lemon Juice
- 1 teaspoon of Caramel Syrup
- 1 and 1/2 cups of Heavy Whipping Cream
- 1 cup of Brown Sugar
- 3 tablespoons of Salted Butter
- 1/3 cup of Karo Syrup
- 1 Egg
- 2 tablespoons of Vanilla
- 1 cup of Pecans
- Caramel Sauce or Maple Syrup (optional)
- Cinnamon Graham Crackers or other Dippers (see suggestions below)
Instructions
- Start by adding the softened cream cheese to a stand mixer and mix on high until smooth.
- Add in powdered sugar, lemon juice, caramel syrup, and heavy cream. Mix on high for several minutes until thick and stiff. Scrape down the sides and bottom of the bowl.
- Spoon the sweet cream cheese mixture into your service dish and smooth out evenly for the creamy base.
- For the pecan pie filling, add brown sugar, butter, Karo syrup, egg, vanilla, and pecans to a saucepan.
- Bring to a gentle boil, stirring continuously. Then lower the temp to medium heat and continue to cook and stir until thick.
- Pour the pecan mixture over the cheesecake layer. Drizzle with caramel or maple syrup if desired.
- Serve with cinnamon graham crackers and enjoy! This will be a must have at every gathering!
