(2) 8 oz. box of Cream Cheese, softened to room temperature
1 cup of Powdered Sugar
2 teaspoons of Lemon Juice
1 teaspoon of Caramel Syrup
1 and 1/2 cups of Heavy Whipping Cream
1 cup of Brown Sugar
3 tablespoons of Salted Butter
1/3 cup of Karo Syrup
1 Egg
2 tablespoons of Vanilla
1 cup of Pecans
Caramel Sauce or Maple Syrup (optional)
Cinnamon Graham Crackers or other Dippers (see suggestions below)
Instructions
Start by adding the softened cream cheese to a stand mixer and mix on high until smooth.
Add in powdered sugar, lemon juice, caramel syrup, and heavy cream. Mix on high for several minutes until thick and stiff. Scrape down the sides and bottom of the bowl.
Spoon the sweet cream cheese mixture into your service dish and smooth out evenly for the creamy base.
For the pecan pie filling, add brown sugar, butter, Karo syrup, egg, vanilla, and pecans to a saucepan.
Bring to a gentle boil, stirring continuously. Then lower the temp to medium heat and continue to cook and stir until thick.
Pour the pecan mixture over the cheesecake layer. Drizzle with caramel or maple syrup if desired.
Serve with cinnamon graham crackers and enjoy! This will be a must have at every gathering!
