Description

Turn yesterday’s barbecue into tonight’s easy meal with this irresistible Leftover Pulled Pork Sliders recipe! Tender, saucy meat is piled onto soft Hawaiian rolls and topped with creamy coleslaw, pickles, and your favorite BBQ sauce for a quick dinner that’s perfect for family dinners, game day parties, or anytime you’re craving delicious pork sandwiches. These little sandwiches come together in just minutes and are a great way to use up leftover pulled pork from the slow cooker or Instant Pot.

  • 12 Pack Hawaiian Rolls
  • 1 1/2 Pounds Leftover Pulled Pork, heated
  • 2 Cups Coleslaw
  • 12 Bread and Butter Pickle Chips
  • 1 Cup BBQ Sauce
  • 4 Tablespoons Unsalted Butter, melted
  • 1 Teaspoon BBQ Seasoning
  • Minced Parsley, optional garnish

Instructions

  1. Place the Hawaiian rolls on a cutting board and use a bread knife to slice them in half horizontally, keeping the tops and bottoms together. Set the tops aside and leave the bottom half on the board.
  2. Spread the warm pulled pork evenly over the bottom half of the rolls.
  3. Top the pulled pork with an even layer of coleslaw.
  4. Place one pickle chip on each slider. I like using large pickle chips because they fit the sliders perfectly.
  5. Drizzle your favorite BBQ sauce over the pickles.
  6. Place the tops of the rolls back on the sliders, lining them up with the bottoms.
  7. Stir the BBQ seasoning into the melted butter, then brush the mixture over the tops of the rolls.
  8. Sprinkle with fresh parsley, if desired. Slice into individual sliders and serve immediately.

Notes

  • I don’t recommend storing these sliders after they’re assembled because the buns will get soggy. If you’re not serving them right away, keep the ingredients separate and assemble them just before serving.
  • Use your favorite coleslaw here! I used a red cabbage coleslaw because it’s my personal favorite, but Richy prefers a more traditional finely chopped coleslaw. Homemade, store-bought, creamy, or crunchy—they all work great.
  • Be sure to use a BBQ sauce you really love since it’s one of the main flavors in this recipe.
  • Feel free to add more or less BBQ sauce depending on your taste. There’s no wrong amount!
  • Not a fan of bread and butter pickles? Swap them for dill pickles, another favorite variety, or leave them off altogether.
  • You can separate the rolls and build each slider individually if you prefer. I like keeping the rolls together and assembling them all at once because it’s much faster.
  • Any BBQ seasoning will work for the buttery topping. I usually grab a basic store-bought blend and call it good.
