Description

This Strawberry Feta Spinach Salad with Poppy Seed Dressing is a refreshing salad that balances the sweetness of fresh strawberries with leafy greens, tangy feta cheese and candied pecans. This salad has a fantastic flavor combo and crunch. It’s a perfect choice for a light lunch or a stunning side dish at any gathering.

  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 1 tablespoon poppy seeds
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Begin by preparing your poppyseed dressing. In a medium bowl combine the apple cider vinegar, honey, olive oil, poppy seeds, dijon mustard, salt, and pepper and whisk until fully combined. You can also place the ingredients in a mason jar with a tight lid and shake to combine if you’d like.
  2. Now assemble your salad by placing the spinach, strawberries, red onion, feta, and pecans in a large bowl. Pour about half of the dressing over the salad and toss to combine. Taste and add more dressing if desired. Serve immediately, and enjoy!

Notes

  1. Tip: a few variations to this salad could include substituting the feta with goat cheese, adding arugula or blueberries, or substituting the pecans with any of your favorite nuts.
  2. Tip: If strawberries are not in season, mandarin oranges, pineapple cubes, or roasted pumpkin cubes would all work well depending on the time of year.
