Description

One Skillet Taco Rice is an easy, family-friendly dinner made with seasoned ground beef, rice, taco seasoning, and salsa, all cooked together in one pan. Finished with queso and cilantro, this quick 30-minute meal is perfect for busy weeknights, Taco Tuesday, or anytime you’re craving a hearty, cheesy dinner with minimal cleanup.

Instructions

  1. Brown the ground beef and diced onion together in a large skillet over medium-high heat. Drain and return to the stovetop.
  2. Pour in the beef broth, salsa, taco seasoning, and garlic salt. Stir.
  3. Add the uncooked rice and stir well. Bring to a boil, then reduce the heat to low and cover the skillet with a lid.
  4. Simmer on low for 25 minutes. Gently stir the mixture every 5 minutes for the first 15 minutes.  During the last 10 minutes, leave the lid on and resist the temptation to stir so the rice can finish cooking properly.
  5. Top with queso and fresh cilantro. Serve immediately.
