How to Make Lace Cookies

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set it aside for now.
  2. In a medium saucepan, melt the butter and brown sugar in the milk over low heat for 3-4 minutes, or until the butter and sugar have fully melted and no sugar granules remain. Increase the heat to medium temperature and cook until bubbles begin to break the surface of the caramel.
  3. Remove from heat and add the vanilla extract and dry ingredients (all-purpose flour, almond flour, and salt).  Stir until no streaks of flour remain.  
  4. Let the cookie dough stand for a few minutes to cool down and thicken slightly.  It will be quite runny.

  1. Spoon the batter in teaspoon-sized dollops on the lined cookie sheet.  Leave at least 3 inches between each cookie.  They will spread significantly.  
  2. Bake for 5-7 minutes in a preheated oven.  The cookies will be flat, spread out, and bubbling.  **See the note below.
  3. Let them cool on the pan completely so they harden up. It doesn’t take long for them to cool down, only 8-10 minutes. Move to a wire rack.

**Note: don’t rely too heavily on the bake time with these cookies. Because they’re so thin and sugar-based, they can go from pale to perfectly golden (or even overdone) very quickly, and every oven bakes a little differently. Watch them closely and pull them as soon as they’re evenly golden brown and lacy.
