I know I’m getting old when I’m sharing a classic dip recipe that I made as a teenager… more than 30 years ago. And that is depressing.

On the upside, since Rotel dip has been around for that long, it has got to be a great dip! The only difference is that, as a teen, I made a 3-ingredient dip without cream cheese. But now I add cream cheese for an extra creamy Sausage Rotel Dip.

Rotel Sausage Dip with Cream Cheese

 Using simple ingredients – ground sausage, Velveeta Queso Blanco, a can of Rotel, and cream cheese – you can put this easy dip recipe together in less than 10 minutes, then go do your other party prep while the Crock Pot does all the work!

Whether you call it Rotel Dip with Sausage, Sausage and Cheese Dip, or Sausage Queso Dip, it’s going to become one of your favorite recipes for parties!

 • Ground breakfast sausage (pork sausage) – we like to use mild sausage, but you could easily change it up and use hot sausage for a spicy dip. 
 • Velveeta cheese, Queso Blanco, cubed (or regular Velveeta if you prefer)
 • Rotel tomatoes  – some members of my family do not like hot dip so we use Mild Rotel, but Original Rotel or Hot Rotel also work great. There are also brands of diced tomatoes with green chiles that aren’t “Rotel” brand that also work just fine
 • Cream cheese, cubed

How to Make Rotel Dip in Crock Pot

  1. Add the ground sausage to a large skillet over medium heat. Break it into small pieces and then brown sausage until its fully cooked.
  2. Remove from heat and discard the excess grease.

  1. Add the cooked browned sausage, cubed Velveeta Queso Blanco, both cans of Rotel, and cubed cream cheese to the slow cooker.
  2. Cover and cook on low for 2–3 hours, stirring halfway through for even melting and a creamy texture.

  1. Reduce the heat to “warm” and serve with tortilla chips (⬅️ you can make those homemade too!). For a slightly thinner cheese dip with sausage, stir in a splash of milk before serving.

  • Meat swaps: Regular sausage or turkey sausage work well; bulk sausage or Jimmy Dean sausage are great options too. For a lower-fat version try turkey breakfast sausage. Yes  – this easy recipe is so versatile! After browning the sausage, add the cheeses and Rotel to the skillet and melt over medium-low heat, stirring until smooth.

If you need to make this easy sausage dip at the last minute, you can add the cooked sausage and all other ingredients to a large microwave-safe bowl and microwave for 1-minute intervals, stirring in between, until it’s completely melted and heated all the way through.

My cheese dip is thicker than I would like. How can I thin it down?

Stir in 1/2 cup milk and add more by the tablespoon until you reach the desired creamy texture.
