I know I’m getting old when I’m sharing a classic dip recipe that I made as a teenager… more than 30 years ago. And that is depressing.
On the upside, since Rotel dip has been around for that long, it has got to be a great dip! The only difference is that, as a teen, I made a 3-ingredient dip without cream cheese. But now I add cream cheese for an extra creamy Sausage Rotel Dip.

• Ground breakfast sausage (pork sausage) – we like to use mild sausage, but you could easily change it up and use hot sausage for a spicy dip.
• Velveeta cheese, Queso Blanco, cubed (or regular Velveeta if you prefer)
• Rotel tomatoes – some members of my family do not like hot dip so we use Mild Rotel, but Original Rotel or Hot Rotel also work great. There are also brands of diced tomatoes with green chiles that aren’t “Rotel” brand that also work just fine
• Cream cheese, cubed

How to Make Rotel Dip in Crock Pot
- Add the ground sausage to a large skillet over medium heat. Break it into small pieces and then brown sausage until its fully cooked.
- Remove from heat and discard the excess grease.



- Add the cooked browned sausage, cubed Velveeta Queso Blanco, both cans of Rotel, and cubed cream cheese to the slow cooker.
