Several years ago, I was in charge of the kitchen and meals for the VBS program at our church each summer (VBS = Vacation Bible School = an annual weeklong summer program for kids in our church and an outreach to other kids in our commun
I was first introduced to this Easy Walking Taco recipe while doing that job. I was doing some research for affordable, filling, easy meals we could serve the kids that they would like.
Tacos were a great idea – but tacos in a bag were an even better idea. We’ve had them almost every year since, and they’re always a huge hit! Kids love Walking Tacos!!

They’re a fun, easy twist on taco night where everything is served right inside a single-serve bag of chips instead of a taco shell.
You add warm taco meat directly to the bag, then pile on your favorite taco toppings like cheddar cheese, sour cream, lettuce, tomatoes, and green onions. Grab a fork, give it a quick mix, and eat straight from the bag.
If you’ve ever had a Frito pie, Walking Tacos are similar but better because they have almost no clean up and endless topping options. Walking tacos are a simple, crowd-pleasing meal everyone loves.

I have included a recipe for homemade taco seasoning, but honestly, for the church, we always use store-bought taco seasoning. It’s just so much easier and you can even buy it in bulk when cooking meat for a crowd.

For the Homemade Taco Seasoning*

*You could absolutely use a packet of Taco seasoning from the store instead of making your own!

- Cheddar cheese, finely shredded
- Lettuce, shredded

How to Make Walking Tacos
For the Taco Seasoning:
- In a small bowl, whisk together the chili powder, cumin, garlic powder, onion powder, paprika, oregano, coriander, kosher salt, black pepper, and cornstarch (if using) to make your homemade taco seasoning. Set aside.


For the Taco Meat:
- Place a large skillet over medium heat and brown ground beef, breaking it apart as it cooks. Cook until fully browned, about 5 to 7 minutes, then drain excess grease.


- Sprinkle the seasoning over the taco meat and stir well to coat. Add the water and mix until combined. Bring to a simmer, reduce the heat to medium-low, and cook another 5 to 7 minutes until slightly thickened.


Assembling Walking Tacos
- Set up a walking taco bar by placing all your favorite taco ingredients and additional toppings into separate bowls.
- Take a bag of Fritos or Doritos (or whichever chips you prefer) and gently crush them slightly so the chips are bite-sized.
- Using a pair of scissors, cut the Frito bag open down the side to create a bowl. Fold the edges down for stability.
- Spoon taco meat directly into the bag of chips.

When figuring out how much hamburger meat to buy per person for regular tacos, I usually buy 1 pound for every 4 people (or 4 ounces each). For walking tacos, plan on about 2-3 ounces of ground beef per person since the bag of chips and toppings help fill everyone up. Use closer to 2 ounces if you’re serving lots of toppings or sides (beans especially add bulk) or serving kids, and 3-4 ounces for a more standard portion.

For the Bags:
- 6 individual bags of Doritos and/Fritos (2.75 oz each)
- 2 cups cheddar cheese, finely shredded
- 1 cup iceberg or romaine lettuce, shredded
- 1 cup tomatoes, diced
- 1/2 cup red onion, diced
- Sliced jalapeños (fresh or pickled)
- Chopped fresh cilantro
- 3–4 green onions, sliced thin
- Sour cream or Mexican crema
- Taco sauce (mild, medium, or hot)
- Guacamole
- 1 can (15 oz) black beans, rinsed and drained
Instructions
- In a small bowl, whisk together the chili powder, cumin, garlic powder, onion powder, paprika, oregano, coriander, kosher salt, black pepper, and cornstarch (if using) until well combined. Set aside.
- Place a large skillet or pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it’s fully browned (about 5-7 minutes). Drain the excess grease from the skillet.
- Sprinkle the taco seasoning over the meat, then stir to coat.
- Pour in the water and stir everything together until well combined. Bring the mixture to a simmer, reduce heat to medium low and let it cook for another 5-7 minutes, or until the sauce has thickened slightly.
- Place all your toppings into separate bowls so everyone can easily build their own bag.
- Take a bag of chips. Gently crush the chips inside the bag with your hands to break them into smaller, bite-sized pieces.
- Using scissors, cut the bag open lengthwise down the side. This creates a “bowl” that’s easy to eat from. Fold over the edges to create some stability.
- Spoon a generous amount of the taco meat into the chip bag.
- Let everyone move down the topping bar and add their desired toppings directly into the bag. Stick a fork in the bag, give it a little stir to mix everything, and enjoy!
Notes
- The cornstarch is optional but helps create a thicker, more coating-like sauce that clings better to the meat. If you prefer a thinner consistency or don’t have cornstarch on hand, simply omit it and the seasoning will still taste delicious.
- This recipe makes enough seasoning for 1 lb of meat. You can easily double or triple the seasoning recipe and store the extra in an airtight container for up to 1 year.
- Don’t like ground beef? This works great with ground turkey, ground chicken, or chorizo.
- For a vegetarian version, sauté crumbled tofu, lentils, or a mix of black beans with the taco seasoning.
- Add a pinch of cayenne pepper to the seasoning mix, use a hot taco sauce, or add extra jalapeños to your bag from a kick.
