  1. Transfer the cooked cauliflower to a colander and let it drain well. Removing the excess water and excess moisture is the best way to achieve a smooth, creamy texture. If needed, gently pat the cauliflower dry with a paper towel.
  2. Place the drained cauliflower in a food processor with the butter and a splash of buttermilk. Blend until smooth and creamy. If you don’t have a food processor, you can use an immersion blender or potato masher to reach your desired consistency.
