When researching popular cookies for the 12 Days of Christmas Cookies series, Oatmeal Raisin Cookies kept coming up over and over again.
I tried to push back and not do them because raisins are not popular in my house in any recipe. But since I wanted to do really trendy cookies that are loved this time of year, I finally gave in to the Google results and added them to my list.

And since my hubby and kids wanted nothing to do with them, I decided to make this recipe to honor my Mama… who loves Oatmeal Raisin cookies.

This worked out great for her – nobody asked her to share and the recipe only makes a dozen cookies, so she wasn’t overrun with them either. She actually says that’s the reason she likes Oatmeal Raisin Cookies – she never has to share 😊

So as mentioned above, this recipe is for a very popular trendy recipe, but unlike most Oatmeal Raisin Cookies I’ve seen, this cookie is a little different. It’s thick, soft and chewy.

And really, you only need one or two of them in a sitting because they’re pretty big cookies. A dozen of them would great for packing up as a gift for a family or friend for Christmas or maybe someone under-the-weather. Baked goods are always good for brightening someone’s day.
And as usual, I think they’re better with ice-cold milk!

Soft Oatmeal Raisin Cookies Recipe

These Soft Oatmeal Raisin Cookies are a little different than other more traditional Oatmeal Raisin Cookies. These are soft & cloud-like with a chewy texture that you’ll love!
Ingredients

1 stick butter- softened
½ cup brown sugar- packed
1 egg
1 teaspoon vanilla extract
1 cup flour
½ teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
1 cups instant oats
1 cup raisins
Instructions
Instructions:
Preheat your oven to 350 degrees F and prepare a baking sheet with nonstick spray and set aside.
In the bowl of a stand mixer equipped with a paddle attachment add butter and brown sugar and cream until light and fluffy.
Add in egg and vanilla extract and mix well.
In a medium bowl, combine flour, baking soda, cinnamon, nutmeg, and salt and whisk.
Add the dry ingredients to the mixing bowl and mix until a dough forms.
Add in raisins and oats and mix well until combined.
Roll about 3 tablespoons of dough into a ball and place about 1 ½ inches apart on the baking pan and bake for 10-11 minutes or until golden brown.
Allow to cool completely and serve!
